This is a 3-hour experience in Phnom Penh, built around Wat Botum Park, ភោជនីយដ្ឋាន​ រំដេង​ - Romdeng Restaurant and Phnom Penh Night Market. Khmer food is milder than Thai and sourer than Vietnamese, built on prahok fermented fish paste and on kroeung, a lemongrass, galangal, turmeric and kaffir-lime paste pounded fresh. The dish everyone is taught is fish amok, a coconut curry steamed in a banana-leaf cup until it sets like a custard; lok lak, pepper-seared beef with a lime-and-pepper dipping sauce, is the other. Kampot pepper, which has a protected origin, turns up in both.
