A 3-hour trip from Siem Reap that visits Krong Siem Reap and Siem Reap. The price covers Khmer cocktail in a historic wooden house, French starter in an Indochine garden and Cambodian chef tasting platter. It does not cover personal expanse and tip (driver recommend), so budget for those separately. Khmer food is milder than Thai and sourer than Vietnamese, built on prahok fermented fish paste and on kroeung, a lemongrass, galangal, turmeric and kaffir-lime paste pounded fresh. The dish everyone is taught is fish amok, a coconut curry steamed in a banana-leaf cup until it sets like a custard; lok lak, pepper-seared beef with a lime-and-pepper dipping sauce, is the other. Kampot pepper, which has a protected origin, turns up in both.
