Zweieinhalb Stunden Kochen in einem Hmong-Haus in Ta Van, im Tal unterhalb von Sapa.

Das findet im Dorf statt und nicht in der Küche eines Restaurants in Sapa, mit einem Hmong-Guide, und darin liegt der Unterschied. Sie kochen auf der Anlage des Hauses und essen, was Sie machen, am Tisch der Familie.

Frühlingsrollen sind der Anker der Sitzung. Vietnamesische Rollen werden um das gebaut, was da ist: Glasnudeln, Blattgrün, Schweinehack, Pilz, Mu-Err. Das Rollen ist der Teil, den zuerst alle falsch machen, denn das Reispapier weicht schnell auf und alles hängt daran, wie fest Sie rollen und wie schnell Sie arbeiten.

Ta Van liegt im Muong-Hoa-Tal zwischen den Reisterrassen, ein Dorf der Giay und Hmong am Fluss. Von der Stadt Sapa dort hinunterzukommen gehört dazu, und das Tal sieht ganz anders aus als vom Grat.

Die Hmong-Küche des Nordens stützt sich auf Dinge, die einen kalten Bergwinter überstehen: geräuchertes und getrocknetes Fleisch, fermentiertes Grün und den einheimischen schwarzen Kardamom, der hier unter dem Walddach wächst und eine der tatsächlichen Exportkulturen von Sapa ist.

Hele vriendelijke mensen! We hebben heel lekker gegeten! Het was heel leuk om traditioneel te koken. Ze had nog net iets meer kunnen uitleggen over de Vietnamese keuken. We hadden graag nog meer geleerd. Over het algemeen hebben wij ons goed vermaakt.
