Zwei Stunden Frühlingsrollen in Sapa, die schwerer richtig zu machen sind, als sie aussehen.
Vietnamesische Rollen teilen sich in zwei Dinge, die verwechselt werden. Frische Rollen, Goi Cuon, werden in aufgeweichtem Reispapier gerollt und nicht gekocht. Frittierte Rollen, im Norden Nem Ran, werden in einer dünneren Hülle fester gerollt und gehen in heißes Öl. Der Kurs dreht sich um das Rollen, denn die Füllungen sind nachsichtig und die Hülle ist es nicht.
Das Reispapier ist es, was alle erwischt. Es weicht in Sekunden auf und weicht auf dem Brett weiter auf, Sie haben also ein enges Fenster: zu trocken bricht es, zu feucht reißt es, wenn Sie es zuziehen. Die Lösung ist, schneller zu arbeiten, als es sich angenehm anfühlt, und die Füllungen trockener zu halten, als Sie denken.
Die Füllungen folgen hier dem, was der Norden hat: Glasnudeln, Blattgrün, Schweinehack, Mu-Err und andere Pilze, Kräuter aus dem Garten.

I had an amazing time during this cooking class. I learned how to make spring rolls and the sauce. Duyen was so friendly and made the instructions so clear.

I love it! I did not have anyone on the class so it was 1 on 1 session which felt more relaxed and personalized. While making the spring rolls I got to hear the stories of the teacher (lady.) She was very kind and explained the process thoroughly to me. She ended up giving me a bracelet for good luck and spring roll wrapper as a gift. Enjoyed the experience and definitely recommend!

We joined an amazing Vietnamese spring roll cooking class and absolutely loved it. Our instructor was warm, enthusiastic, and incredibly kind. She explained every step clearly, making it easy to follow along and learn the real authentic way of preparing spring rolls. We had such a fun afternoon, and the spring rolls turned out super delicious — fresh, flavorful, and more than enough to count as lunch or dinner.
