Dos horas y media cocinando en una casa hmong en Ta Van, en el valle por debajo de Sapa.

Esto ocurre en el pueblo y no en la cocina de un restaurante de Sapa, con un guía hmong, y ahí está la diferencia. Se cocina en la instalación de la casa y se come lo que uno hace en la mesa de la familia.

Los rollitos de primavera son el eje de la sesión. Los rollitos vietnamitas se construyen con lo que hay a mano: fideos de arroz, hojas verdes, carne picada de cerdo, champiñón, oreja de Judas. Enrollarlos es la parte que todo el mundo hace mal al principio, porque el papel de arroz se ablanda rápido y todo depende de lo apretado que se enrolle y de lo rápido que se trabaje.

Ta Van está en el valle de Muong Hoa entre los arrozales en terrazas, un pueblo giay y hmong junto al río. Bajar hasta allí desde la ciudad de Sapa forma parte del asunto, y el valle se ve completamente distinto que desde la cresta.

La cocina hmong del norte se apoya en cosas que aguantan un invierno frío de montaña: carne ahumada y secada, verduras fermentadas y el cardamomo negro local que crece aquí bajo la cubierta del bosque y que es uno de los cultivos de exportación reales de Sapa.

Esta es la reserva para un día en que la nube llena el valle, lo que en Sapa pasa a menudo. Nada de esto depende de la vista.

Hele vriendelijke mensen! We hebben heel lekker gegeten! Het was heel leuk om traditioneel te koken. Ze had nog net iets meer kunnen uitleggen over de Vietnamese keuken. We hadden graag nog meer geleerd. Over het algemeen hebben wij ons goed vermaakt.
