Dos horas de rollitos de primavera en Sapa, que son más difíciles de acertar de lo que parecen.
Los rollitos vietnamitas se dividen en dos cosas que la gente confunde. Los rollitos frescos, goi cuon, se envuelven en papel de arroz ablandado y no se cocinan. Los rollitos fritos, nem ran en el norte, se enrollan más apretados en una envoltura más fina y van a aceite caliente. La clase trata del enrollado, porque los rellenos perdonan y la envoltura no.
El papel de arroz es lo que pilla a todo el mundo. Se ablanda en segundos y sigue ablandándose sobre la tabla, así que se tiene una ventana estrecha: demasiado seco se agrieta, demasiado mojado se rompe al cerrarlo. El remedio es trabajar más rápido de lo que resulta cómodo y mantener los rellenos más secos de lo que uno cree.
Los rellenos aquí siguen lo que tiene el norte: fideos de arroz, hojas verdes, carne picada de cerdo, oreja de Judas y otras setas, hierbas de la huerta.

La clase es en interior, en Sapa. La nube llena este valle buena parte del año y cierra las vistas y los vuelos; esta se da igualmente, lo que la convierte en algo sensato que guardar en reserva para un día gris.

I had an amazing time during this cooking class. I learned how to make spring rolls and the sauce. Duyen was so friendly and made the instructions so clear.
It was fun, easy, interactive and enjoyable. It was for 2 hours and I got to eat the food at the end! Host was friendly and knowledgeable. The setting was beautiful.

I love it! I did not have anyone on the class so it was 1 on 1 session which felt more relaxed and personalized. While making the spring rolls I got to hear the stories of the teacher (lady.) She was very kind and explained the process thoroughly to me. She ended up giving me a bracelet for good luck and spring roll wrapper as a gift. Enjoyed the experience and definitely recommend!

We joined an amazing Vietnamese spring roll cooking class and absolutely loved it. Our instructor was warm, enthusiastic, and incredibly kind. She explained every step clearly, making it easy to follow along and learn the real authentic way of preparing spring rolls. We had such a fun afternoon, and the spring rolls turned out super delicious — fresh, flavorful, and more than enough to count as lunch or dinner. And the best part: she also showed us how to eat them properly, which is totally different than you might expect! In short: highly recommended. Just do it!
