Colombo mange tard. La foule des bureaux se disperse, la chaleur baisse, et les chariots et petites cuisines a moitie fermes a seize heures commencent leur vrai commerce. Ce tour est construit autour de ce changement, commencant en soiree et durant environ trois heures avec toute la nourriture incluse.

La cuisine de l’ile est le produit de tous ceux qui l’ont traversee. Le riz et curry cingalais cotoie le dosai et le vadai tamoul, les short eats et le biryani musulmans, les marinades malaises et le lamprais d’origine hollandaise, et Colombo est l’endroit ou tout cela est disponible en quelques rues. Votre guide commande en cingalais et en tamoul selon ce que le stand exige, et explique ce qui est devant vous plutot que de vous laisser deviner.

Attendez-vous a du kottu roti fait sur une plaque chaude avec deux lames, que vous entendez avant de le voir ; des hoppers, les crepes en forme de bol a base de farine de riz qui viennent nature ou avec un oeuf casse au milieu ; de l’isso wade, les beignets de crevettes vendus depuis des chariots le long de Galle Face Green au crepuscule ; et une serie de short eats, les rouleaux frits, cotelettes et tartes qui remplissent chaque vitrine de la ville. Des douceurs et une boisson closent la soiree.

Le piment sri-lankais n’est pas decoratif. La plupart de ce qui vous sera donne est vraiment piquant, mais le guide peut vous orienter vers des versions plus douces et chaque stand a quelque chose qui ne brulera pas. Dites quelque chose tot plutot que de souffrir poliment.

L’itineraire se fait a pied en courts trajets avec du transport entre les groupes, et il double comme un tour nocturne de la ville : les arcades de Pettah une fois les volets fermes, le mur de mer a Galle Face, et les rues residentielles ordinaires ou se trouve generalement le meilleur kottu.

The street food was so delicious. However the seafood restaurant was not so nice. The location and view were stunning but the prawns were over cooked, the vegetable was very tough, and the rice tasteless. Also the driver was half an hour late for the pick up. However he was very friendly and tried very hard. I must give him credit for his effort and big smile.
