Deux heures sur les rouleaux de printemps à Sapa, plus difficiles à réussir qu'ils n'en ont l'air.
Les rouleaux vietnamiens se divisent en deux choses que l'on confond. Les rouleaux frais, goi cuon, sont roulés dans une galette de riz ramollie et ne sont pas cuits. Les rouleaux frits, nem ran au nord, sont roulés plus serré dans une enveloppe plus fine et passent dans l'huile chaude. Le cours porte sur le roulage, parce que les garnitures pardonnent et l'enveloppe non.
La galette de riz est ce qui piège tout le monde. Elle ramollit en quelques secondes et continue de ramollir sur la planche : vous avez donc une fenêtre étroite. Trop sèche, elle craque ; trop mouillée, elle se déchire quand vous la refermez. Le remède consiste à travailler plus vite que ce qui est confortable et à garder les garnitures plus sèches que vous ne le croyez.
Les garnitures ici suivent ce que le nord a : vermicelles, feuilles vertes, porc haché, oreille de Judas et autres champignons, herbes du jardin.
Vous mangez ce que vous roulez.
Le cours se tient en intérieur à Sapa. Le nuage remplit cette vallée une bonne partie de l'année et ferme les vues comme les vols ; celui-ci se tient quand même, ce qui en fait une chose sensée à garder en réserve pour un jour gris.

I had an amazing time during this cooking class. I learned how to make spring rolls and the sauce. Duyen was so friendly and made the instructions so clear.
It was fun, easy, interactive and enjoyable. It was for 2 hours and I got to eat the food at the end! Host was friendly and knowledgeable. The setting was beautiful.

I love it! I did not have anyone on the class so it was 1 on 1 session which felt more relaxed and personalized. While making the spring rolls I got to hear the stories of the teacher (lady.) She was very kind and explained the process thoroughly to me. She ended up giving me a bracelet for good luck and spring roll wrapper as a gift. Enjoyed the experience and definitely recommend!

We joined an amazing Vietnamese spring roll cooking class and absolutely loved it. Our instructor was warm, enthusiastic, and incredibly kind. She explained every step clearly, making it easy to follow along and learn the real authentic way of preparing spring rolls. We had such a fun afternoon, and the spring rolls turned out super delicious — fresh, flavorful, and more than enough to count as lunch or dinner. And the best part: she also showed us how to eat them properly, which is totally different than you might expect! In short: highly recommended. Just do it!
