Full description
Wagashi classes in Kyoto and Tokyo teach the courtly tradition. This one teaches Aichi's, which is a different thing — central Japan built its confectionery on beans and on the same fermentation culture that gave the region its miso and soy sauce, and the sweets here are denser, plainer and more domestic than the delicate nerikiri of the old capital.
Over ninety minutes you make two seasonal sweets using sweet red bean paste and glutinous rice flour, which are the two ingredients most of Japanese confectionery rests on. The instructor is a licensed nutritionist, and the teaching goes further than the technique — how sweetness, texture and bitterness are balanced against each other, and why a sweet designed to be eaten with matcha has to be sweeter than one eaten alone.
That balance is the whole point, and you test it directly: after making the sweets you whisk your own bowl of matcha and eat them together. The bitterness arrives and the sweetness suddenly makes sense.
There is also a genuine regional argument running through the class, about how climate and local ingredients shaped confectionery differently in this part of Japan. It is the sort of context that makes the rest of a trip more interesting — you start noticing what the sweet shops in each city are actually selling.
