Full description
Most cooking classes happen in studios. This one happens in an actual ramen shop, which changes what you learn — you are working with the shop's equipment, its broth and its timings, in the space where the food is normally sold.
The style is Hakata tonkotsu, the pork-bone ramen of Fukuoka: broth simmered until the collagen breaks down and the liquid turns opaque white, served with thin, firm, straight noodles. The chain's founder trained in Hakata under a yatai stall cook before bringing the style to Nagoya, so what you are being taught is a lineage rather than a generic recipe.
You pick one of three: white tonkotsu, the plain creamy version; black tonkotsu, finished with burnt garlic oil, which gives it a dark, almost bitter depth; or kara miso tonkotsu, spiced with miso. Then you make it. The critical part is the noodles — Hakata noodles cook in well under a minute and the window between right and ruined is a few seconds wide, which is why shops ask how firm you want them and why home attempts usually fail.
A trained ramen chef teaches, with Yuka providing English support throughout, so nothing is lost to language. You get a certificate at the end, and more usefully, an understanding of what to look for in every bowl you order for the rest of the trip.
The shop is at Noritake Shinmachi in Nishi-ku, near Nagoya Station. Groups cap at six and the whole thing takes an hour, which makes it easy to slot in before or after a train.
