Takoyaki is street food that came home. It is sold from stalls everywhere in Japan, but the thing visitors rarely see is that most Japanese households own a takoyaki pan and a takoyaki party is an ordinary way to spend an evening with friends — batter, a pan on the table, and everyone arguing about technique.
This class teaches it properly. You mix the batter, which is thinner than anyone expects and is why the inside stays almost liquid. You add the octopus, spring onion and pickled ginger. And then you learn the flip, which is the entire skill: a metal pick, a quarter turn at the right moment, and repeat until the ball closes on itself.
Nobody gets it on the first few. That is the fun of it — the early ones are lopsided and the later ones are round, and the improvement happens visibly inside twenty minutes.
Everything is included: ingredients, pans and utensils, aprons and the tasting at the end. Instruction is in English.
The class runs at the Nagoya City Higashi Lifelong Learning Center, three minutes from the subway in Aoi — a community building rather than a tourist venue, which is part of the appeal.
A longer three-hour option adds a shopping trip, which is genuinely useful if you want to buy a takoyaki pan to take home. They are cheap, they last forever, and they are the one piece of Japanese kitchen equipment that guarantees you will actually cook the thing again.
