Full description

Udon is the right dish to learn first, because the whole thing rests on one skill: getting the dough right. It is flour, water and salt, and everything that separates a good bowl from a bad one happens in the kneading and the resting. Once you have done it with your hands, you can taste the difference in every bowl you eat afterwards.

The class starts there. You knead the dough, roll it out and cut your own noodles, which is messy and satisfying and the reason this session works so well with children — the transformation from a lump of dough to a plate of noodles is visible and entirely your doing. Then the dashi, the stock that underpins most of Japanese cooking, and your own choice of toppings.

Gyoza follows, and folding them is the sociable half of the two hours. The pleats take a few attempts and everyone's early ones are terrible; by the tenth they look like the ones in a shop, and by then the table has usually stopped being strangers.

The teacher is a licensed nutritionist and culinary specialist, and the teaching style is deliberately relaxed and inclusive — this is a class designed to work for a group spanning small children to grandparents rather than for keen cooks alone.

Aichi Prefecture makes some of Japan's best fermented seasonings, and you taste locally crafted soy sauce, miso and mirin alongside the cooking, which is a useful education in why regional Japanese food tastes the way it does.

The studio is in Izumi in Higashi-ku, central Nagoya. Groups run up to sixteen.

This should be your number 1. priority when visiting Osaka! This was one of the highlights of our whole trip. The staff were so friendly, funny, welcoming, helpful and overall just fantastic. The facilities are clean, tidy and full of everything you need. the cooking is well paced without feeling like you're rushing. for non-Japanese speakers, the staff's level of English is exceptional. We did it in a pair but there was also a family attending the class and it was suitable for children too. This is a memory we won't forget and two recipes that we will be taking home. We did the gyoza and ramen class. We would reccomend anyone take this cooking class and make your own delicious lunch for the day. Thank you to the staff for a wonderful day, Gochisousama deshita!!!

We had an amazing experience yesterday doing the ramen and Gyoza class. The two guides were kind, welcoming and patient as they took us through the steps. The class was small (7 guests present for our class but accommodates 8) meaning the guides had time to give us one to one help and advice. I am so glad we booked this experience, it is my favourite thing we have done in Japan. Now I know how to make ramen and Gyoza I will be making them all of the time when back in Australia! Thank you so much!!

Our family of 8 did this cooking experience and it was one of our favorite activities here in Japan. We had full age ranges from grandparents, parents, a 12 year old, and a 9 month old. We loved every minute learning how to make traditional noodles from scratch, all of the different sauces and what flavors they bring out. The ladies run the kitchen were both professional and personable. I highly recommend this to anyone looking for a fun way to learn more about Japanese cuisine.
