Full description
Sri Lankan food is not Indian food, and Colombo is the fastest place to learn the difference. The island cooks with coconut in almost everything, uses roasted curry powder rather than raw, leans on maldive fish, pandan and curry leaf, and treats rice as a platform for eight or nine small dishes. Three hours and a tuk-tuk get you through more of it than a week of hotel breakfasts.
The tour runs on tastings rather than one sit-down meal, which is how the city actually eats. Hoppers are the thing to try first: a fermented rice-flour batter spun into a bowl-shaped pancake, crisp at the rim and soft in the middle, usually with an egg dropped in and a spoonful of lunu miris, the raw onion and chilli sambol. Kottu roti is the loud one, godamba roti chopped on a hot plate with vegetables, egg or meat, and you hear the metal blades from down the street.
Crab with pittu surprises people. Pittu is steamed rice flour and coconut pressed into a cylinder, the traditional partner for the lagoon crab that made Sri Lankan seafood famous abroad. Along the way there are short eats, the snacks sold from glass cases in every tea shop, and watalappan, a jaggery and coconut custard from the Malay community.
Galle Face Green is one of the stops. The seafront promenade dates from the colonial period, and towards evening the carts appear along it selling isso wade, deep-fried lentil patties topped with whole prawns, eaten standing up with the sea in front of you. It is street food in the most literal sense.
