This one is walked, which is the right way to eat Colombo. The tour starts in the Fort and Pettah district, the oldest commercial part of the city, and covers about three hours of stalls, tea shops and food streets with a guide who lives here.
The geography explains the food. Fort was the Portuguese and then the Dutch and then the British administrative quarter, and Pettah, just outside its walls, was where everyone else traded. Pettah is still laid out that way: each street sells more or less one thing, so there is a street for hardware, a street for fabric, a street for dried fish and spices. Eating your way across it means walking through all of them.
What you eat depends on the day and what is coming off the pan, but the backbone is consistent. Short eats, the fried rolls, cutlets and patties that sit in every glass case in the country. Kottu roti chopped on a hot plate with two blades. Vadai and dosai from the Tamil side of the city's kitchen. Tea poured from a height between two metal cups. Somewhere along the way, a stall that has been doing one dish for forty years.
The route also passes the physical history: the Dutch Hospital, the oldest building in Fort and now a courtyard of restaurants, and the Jami Ul-Alfar mosque of 1908 with its red and white banded brickwork, which is the building everyone photographs in Pettah without knowing what it is.
It is a walking tour in a hot, crowded, working part of the city, and it is loud. That is the point. Come at it in comfortable shoes and hungry, and ask the guide about heat levels before you commit to anything with a red sambol on the side.
