La campagne autour de Kandy est un pays de petites exploitations, et ce voyage porte sur la facon dont ces exploitations fonctionnent vraiment plutot que sur une simple vue d'elles.

La cannelle est la piece maitresse. Le Sri Lanka produit la plupart de la vraie cannelle au monde et le procede n'a pas change depuis des siecles: l'ecorce est coupee, la couche externe grattee, et l'ecorce interieure pelee en bandes qui s'enroulent en sechant. Regarder un eplucheur travailler pendant dix minutes explique pourquoi la vraie cannelle de Ceylan coute ce qu'elle coute, et pourquoi la cassia vendue comme cannelle dans la plupart des pays est une plante entierement differente.

La recolte du toddy est l'autre element phare. Un grimpeur monte un palmier a coco, coupe la spathe de la fleur et attache un pot pour recueillir la seve, qui fermente en quelques heures en un vin de palme leger. Les cordes entre les couronnes de palmiers qui permettent aux grimpeurs de passer d'un arbre a l'autre sans descendre valent la peine d'etre vues par elles-memes.

Le reste de la matinee, ce sont des parcelles d'epices, vignes de poivre, cardamome, curcuma, muscade, et les plantes ayurvediques qui poussent dans chaque jardin de village et sont utilisees avant que quiconque ne pense a une pharmacie. Il y a aussi des rizieres ici, et selon la saison vous pouvez voir la plantation ou le battage en cours.

Kandy fut la derniere capitale des rois cinghalais, resistant aux Portugais et aux Hollandais jusqu'a ce que les Britanniques la prennent en 1815, et le Temple de la Sainte Dent Relique sur le lac explique son importance: la relique, consideree comme une dent du Bouddha, est l'objet le plus sacre de l'ile et sa garde legitimait autrefois la royaute. La chambre de la relique ouvre pour le puja trois fois par jour, vers 5h30, 9h30 et 18h30, quand les tambours commencent et que la file avance devant le reliquaire. La tenue couvre epaules et genoux, les chaussures se retirent a l'entree, et l'Esala Perahera en juillet ou aout fait parader le reliquaire sur un elephant a travers la ville pendant dix nuits.

Time it for a puja — 5.30am, 9.30am or 6.30pm. Those are the only windows when the upper relic chamber opens and the hevisi drummers play; outside them you are visiting a beautiful building rather than a ceremony. February for the clearest weather, or July-August, which is drier here than most people expect and covers the Esala Perahera. Reserved seats open 30 days ahead and sell out within hours from December to March. Unreserved 2nd/3rd class is sold on the day and always available — you will stand, which is where the open doorways and the famous photographs are. Sit on the right-hand side going south.
