Full description
Every visitor to the hill country tours a tea factory and watches machines do the work. Very few ever handle the leaf, and doing so changes what the factory tour means.
This session starts in the field. You pluck the leaf yourself — two leaves and a bud, which is the standard and is harder to do consistently than it looks. Pluckers here work to a daily weight quota, almost all of them women, and ten minutes of trying it is a quick education in what that job actually is.
Then the process, by hand. The leaf is withered on a rack rather than in a trough, rolled between the palms until the cell walls break and the juices come to the surface, left to oxidise until it turns from green to copper, and dried. It is exactly what a factory does mechanically, at a scale you can hold.
The tasting covers five grades and is where it comes together: having made a small amount yourself, the differences between a whole-leaf OP and a dust that goes into teabags stop being abstract.
Local snacks come with the tasting, and a walk through the estate rounds out the afternoon. Getting there and back by tuk-tuk on the lanes above Ella is part of it.
