El mercado mayorista de pescado de Tokio se trasladó de Tsukiji a Toyosu en 2018, pero el mercado exterior de Tsukiji, los callejones de tiendas y puestos alrededor del antiguo emplazamiento, se quedó y es donde se hacen los recorridos gastronómicos: tamagoyaki en palito, cortes de atún, uni, vieiras a la parrilla y tiendas de cuchillos, más concurrido de 8:00 a 11:00 aproximadamente y cerrado los domingos y algunos miércoles. La subasta de atún en sí se realiza en Toyosu, observada desde una plataforma antes de las 6:30 con un sorteo anticipado. Las clases de sushi enseñan el shari, el arroz avinagrado, y la presión de la mano del nigiri; la mayoría duran de dos a tres horas y usted come lo que hace.

The sushi making class was very fun. My daughter and I had a great time learning how to make nigiri and maki. At the end we got to eat everything and it was very delicious and a lot of food. Also they were able to accommodate my daughter’s gluten allergy and offer substitutions for what the group was making.

I had an absolutely amazing time at this sushi-making class! The explanations were very clear and easy to follow, making the whole experience both fun and enjoyable. The two instructors were incredibly kind, patient, and attentive throughout the class. They made everyone feel welcome and created such a friendly atmosphere. I highly recommend this experience to anyone looking for a fun and authentic activity. I truly had a wonderful time, and to top it all off, the sushi we made were absolutely delicious! Thank you so much for such a memorable experience!

This was truly one of the most beautiful and memorable experiences of our trip to Kyoto. The sushi-making workshop at Atelier SUSHI exceeded all expectations. From the very first moment, we felt incredibly welcome. The atmosphere was warm, personal, and authentic – you can really feel that this is a family-run place built with passion and love. We really enjoyed our sushi making workshop. The group size was small (a total of two families) and there was so much assistance that our 9 year old is now a confident sushi chef (and has made sushi at home). The workshop was well planned with enough help that everyone, adults included, had a sense of achievement at the end! Highly recommend this!

Kana and her husband were wonderful. The course was very fun and Kana was encouraging all throughout the process while also answering any questions we had about japanese culture. She and her husband made a real effort to connect with everyone and they even gave us recommendations about where to go and what to do. The ingredients were fresh and of high quality. The experience enlightened our day. We would highly recommend this activity to anyone visiting Kyōto.

We had a truly wonderful time with our instructor Ayumi and the team at Atelier SUSHI, who taught us how to make nigiri and maki by hand in their lovely Kyoto kitchen. It was the highlight of our trip to Japan. The rice and fish were just delicious. The team were warm and welcoming, spent time to make us feel at home, and answered every question we had about sushi, the culture, Kyoto, and Japan. We even got some great tips on tourist spots which avoid the crowds and good quality Japanese knives to buy as souveniers without breaking the bank. Yes, if you tell us when you book rather than on the day. Dashi, the fish stock, is in almost everything, so vegetarian and vegan need to be named specifically and the host will plan a kombu-based version. Halal-certified restaurants exist in the big cities but are fewer, so say so early.
We confirm your booking with the operator before we treat it as final, and we need at least one day's notice. Once it is confirmed you get the meeting point, the time and a contact number for the day. If the operator cannot take your date we tell you and refund you rather than leave you waiting.
