Japanese kitchen knives are the product of sword-making technique redirected. When the Meiji government banned the wearing of swords in 1876, the smiths who had spent generations forge-welding hard and soft steel turned to kitchen blades, which is why a good Japanese knife is laminated the way a katana is and why it takes an edge nothing European will hold.
This three-hour session is the real process rather than a demonstration. You change into the craftsman's uniform Japanese smiths actually wear, which sounds like theatre and turns out to be practical — a forge is hot and things spark. The instructors are working knife professionals, and they start with tools and safety: hammer, tongs, grinder, and the specific ways each will hurt you if handled carelessly.
Then the forging. You learn what each stage does to the steel — how heat changes its structure, why you strike where you strike, what the grinding is actually correcting — and you work your own blade through the sequence. It is physical, hot, and considerably more absorbing than most workshops, because the material argues back.
Everything is provided: costume, tools, materials, towel, water, and a box and bag to carry the finished knife home. A premium option upgrades the handle to wood, which is worth the difference if you intend to actually use it.
The studio is in Yase, in Sakyo-ku on the northern edge of Kyoto, at the foot of the Hiei mountain — about twenty minutes out from the centre on the Eizan line, which is part of the appeal.
One practical note for travellers: a knife cannot go in your cabin baggage. Pack it in your hold luggage.
