Tucked into a quiet corner near Sanjo, this tasting room strips away the intimidation that usually surrounds sake and replaces it with an actual education, delivered by a certified sake sommelier who works the room in a kimono and clearly loves the subject. Kyoto has brewed sake for over a thousand years thanks to the pristine well water flowing down from the surrounding mountains, and Fushimi - just south of the city center - remains one of Japan's most celebrated brewing districts. This session uses seven carefully chosen sakes as a tasting arc, moving from light and fragrant ginjo styles through richer junmai and on to something aged or unusual, so you leave understanding the range rather than just having sampled seven cups. Each pour comes with a matched appetizer, chosen specifically to open up flavors that taste flat on their own. The sommelier explains polishing ratios, the role of koji mold, why serving temperature changes a sake's entire character, and how to actually read a label at a liquor shop back home. Questions are welcomed throughout, and the small-group format means you're not competing for attention. It runs about 80 minutes, long enough to feel substantial without turning into a marathon. Don’t let the small number of reviews push you away from this experience! It’s fantastic! We made a last minute booking and had an amazing time in the cute little shop where the class is held. Our host, Yuko, was highly knowledgeable and led us through a great course on the history of sake, how it is produced, and the various flavor profiles resulting from the production process. Through the class, you’ll sample 8 different sake varieties. All of them were delicious and really help you to understand the various flavor profiles present. I now feel much more comfortable going and choosing a sake to pair with food after completing this class. I would highly recommend this class to anyone who likes sake or desires to learn more about it!
