D'où vient réellement le parfum indien

Kannauj distille l'attar depuis environ quinze cents ans. La ville se trouve dans la plaine du Gange, à environ 250 km à l'est d'Agra, et toute son économie repose sur la transformation des fleurs en huile par une méthode qui a à peine changé depuis les Moghols.

C'est une sortie insolite, et c'est la seule de ce genre sur cet itinéraire.

Deg-bhapka

La technique est une hydrodistillation dans le cuivre. Les fleurs entrent dans un alambic de cuivre, le deg, sur un feu de bois avec de l'eau. La vapeur traverse un tuyau de bambou jusqu'à un récepteur, le bhapka, placé dans un bassin de refroidissement et contenant déjà de l'huile de santal. Le parfum se condense directement dans l'huile plutôt que dans l'eau.

Pas d'électricité, pas de thermomètres. Le distillateur juge la chaleur au son du feu et au toucher du cuivre, et un seul lot peut durer plusieurs jours.

Le santal comme base est la raison pour laquelle les attars indiens se comportent différemment des parfums français : pas d'alcool, donc rien ne s'évapore d'un coup, et le parfum se développe sur la peau pendant des heures.

Ce qui est distillé ici

La rose, le jasmin, le vétiver (khus), le kewda de fleurs de pandanus, le safran, et le plus célèbre, le mitti attar, distillé à partir de terre cuite, qui sent exactement la première pluie sur le sol sec. Nulle part ailleurs dans le monde on ne le fabrique.

Les champs et le marché

Selon la saison, vous verrez les champs de fleurs cueillis à l'aube et le marché de gros où la récolte du jour est pesée et vendue. La rose, c'est le printemps ; le jasmin, l'été ; le kewda, la mousson.

Votre propre mélange

Vous travaillez avec un artisan pour créer un attar sur mesure et le rapportez chez vous dans un petit flacon de verre.

Pratique

Une longue journée, environ dix heures en comptant la route dans chaque sens, en voiture privée climatisée. Le déjeuner est local et compris.

Les distilleries sont chaudes, enfumées et pas du tout touristiques. C'est tout l'intérêt ; ne vous attendez pas à un centre pour visiteurs.
