Most visitors see two monuments and a marble shop. Old Agra is a dense grid of lanes behind them, and it has been a working market town far longer than it has been a tourist stop. You cover it by tuk-tuk with a local guide, stopping to eat.
What you eat
Agra's food is Mughlai at its base with a heavy Braj influence, which means richer and sweeter than Delhi. Depending on the evening and what is good, you are likely to run into bedai and jalebi, the local breakfast of a fried lentil-stuffed puri with spiced potato and a coil of hot syrup-soaked jalebi alongside. Petha, the translucent ash-gourd sweet Agra is genuinely famous for, made in dozens of varieties from plain to paan-flavoured. Mughlai kebabs and parathas from stalls that have been at it for generations. Chaat, kulfi, and masala chai from a pot that has not been washed out since morning.
