Agra is a working town and almost nobody sees it.
Most visitors arrive, see one building, and leave. The city behind it has been a Mughal capital, a Maratha stronghold and a British garrison, and it eats accordingly — a Mughlai base with a heavy Braj influence, which means richer and sweeter than Delhi.
What you eat
Bedai and jalebi, the local breakfast: a fried lentil-stuffed puri with spiced potato, and a coil of hot syrup-soaked jalebi alongside. This is what Agra actually eats in the morning.
Petha, the translucent ash-gourd sweet the city is genuinely famous for. It comes in dozens of varieties — plain, angoori, paan-flavoured, kesar — and the good shops have been at it for generations.
