Agra beyond the monument

Four million people a year come to Agra and most of them see one building and a car park. The old city behind it is a working Mughal-era town of lanes, havelis, temples and craft workshops, and this walk goes into it.

9:00 — the walk

On foot from your hotel with a local guide.

The route runs through Mughal-era streets and the havelis of merchant families, past small temples that see no visitors at all, and into the artisan workshops that still supply the city. Marble inlay is the trade Agra is known for — the same pietra dura technique used on the Taj, worked by families who trace the skill back to the craftsmen who built it. You can watch a piece being cut and set.

Street life at that hour is the real content: chai being poured from height, kachori frying, buffalo in the lanes, children going to school past a 400-year-old gateway nobody has thought about in years.

The cooking class

Then into a home kitchen.

Agra's food is Mughlai and Braj at once — the imperial kitchen tradition of kebabs, korma and biryani, and the vegetarian cooking of the Krishna country just north of here. What you cook depends on the household and the season, but expect a dal, a seasonal vegetable, breads worked on the tawa, and rice.

You cook rather than watch. The host explains the spice logic as you go — why whole spices go into hot ghee first, what asafoetida is for, how much turmeric is too much.

Then you eat it

Sitting down, with the family, which is the end of the tour.

About five hours from a 9am pickup. A fair amount of walking on uneven lanes — flat shoes.

Vegetarian throughout unless you ask otherwise. Jain, no-onion-garlic and no-chilli versions are all normal requests; say so when you book.
