Where India's perfume actually comes from

Kannauj has been distilling attar for something like fifteen hundred years. It sits on the Ganges plain about 250 km east of Agra, and its entire economy is built on turning flowers into oil by a method that has barely changed since the Mughals.

It is an unusual day out, and it is the only one of its kind on this route.

Deg-bhapka

The technique is hydro-distillation in copper. Flowers go into a copper still — the deg — over a wood fire with water. The vapour travels through a bamboo pipe into a receiver, the bhapka, which sits in a cooling pool and already contains sandalwood oil. The fragrance condenses directly into the oil rather than into water.

No electricity, no thermometers. The distiller judges heat by the sound of the fire and the feel of the copper, and a single batch can run for days.

Sandalwood as a base is why Indian attars behave differently from French perfumes: no alcohol, so nothing flashes off, and the scent develops on skin over hours.

What is distilled here

Rose, jasmine, vetiver (khus), kewda from screwpine flowers, saffron, and the famous one — mitti attar, distilled from baked earth, which smells precisely like the first rain on dry ground. Nowhere else in the world makes it.

The fields and the market

Depending on the season you will see the flower fields being picked at dawn and the wholesale market where the day's harvest is weighed and sold. Rose is spring; jasmine is summer; kewda is the monsoon.

You work with an artisan to build a custom attar and take it home in a small glass bottle.

Practical

A long day — about ten hours including the drive each way, in a private air-conditioned car. Lunch is local and included.

The distilleries are hot, smoky and entirely un-touristed. That is the appeal; do not expect a visitor centre.
