The Taj changes more through the day than any photograph suggests, and this tour lets you choose which version you get.
Sunrise is the quieter one. The complex opens about half an hour before dawn and the first batch has it nearly to themselves. The marble reads grey, then flushes pink, then settles white as the sun clears the horizon behind the dome. It is also the only comfortable option between April and July.
Sunset is warmer and busier. The light comes from the west onto the face of the building rather than behind it, so the marble goes gold and amber, and the shadows in the inlay work stand out in a way they do not at midday. The crowd is heavier but the temperature is falling rather than climbing.
If you are choosing purely on photographs, take sunrise. If you are not a morning person, sunset is a real alternative rather than a consolation.

Winter sunrise can be fogged out entirely; if you are visiting in late December or January and only get one chance, sunset is the safer bet.
