Detailed Itinerary

SEASONING THAI COOKING CLASS — 2.5 HOUR EXPERIENCE

ARRIVAL & WELCOME (10 minutes)

Your culinary journey begins when you arrive at Seasoning Thai Cooking Class

in the serene heart of Cherngtalay. You'll be greeted by Chef Ern and the warm,

friendly team in a private garden setting surrounded by lush greenery. The

peaceful ambiance immediately transports you away from the hustle of Phuket's

tourist areas. Upon arrival, you'll receive a welcome drink — a refreshing

traditional Thai beverage — to start your experience. You'll meet other guests

in your intimate class (small group sizes ensure personalized attention) and

receive your professional cooking apron and all necessary equipment.

INTRODUCTION TO THAI CUISINE & INGREDIENTS (15 minutes)

Chef Ern begins by sharing his passion for Thai cooking and the philosophy

behind Seasoning Thai Cooking Class: "We would like to share the rich flavors

and culture of Thai cuisine with food lovers from all around the world." You'll

learn about the fundamental flavors that define Thai cooking — the perfect

balance of sweet, sour, salty, and spicy. Chef Ern walks you through the

garden-to-table ingredients you'll be using, explaining the origin, flavor

profile, and culinary importance of each: Thai basil, lemongrass, galangal,

kaffir lime leaves, fresh chilies, coconut milk, and more. This foundation

helps you understand not just the recipes, but the soul of Thai cuisine.

DISH 1: TOMYUM SOUP WITH SHRIMP (30 minutes)

You'll start with Thailand's most iconic soup. Chef Ern demonstrates proper

knife techniques for preparing fresh herbs and aromatics, then guides you

through building layers of flavor — creating the perfect balance of heat,

sourness, and aroma. You'll learn the secret to achieving the signature tomyum

taste that makes this dish beloved worldwide. If you prefer chicken over shrimp

or follow a vegetarian diet, Chef Ern will adapt the recipe to your preference

without compromising authenticity. As your soup simmers, you'll understand why

this dish has been a cornerstone of Thai dining for centuries.

DISH 2: PADTHAI NOODLES WITH SHRIMP (30 minutes)

Next, you'll master the art of making pad thai — the street food that represents

Thailand to the world. Chef Ern teaches you the wok technique essential for

achieving the perfect texture and flavor. You'll learn to balance the tamarind

paste, fish sauce, and lime juice to create the authentic sweet-sour-salty

combination. The key is speed and confidence with the wok — Chef Ern demonstrates

first, then guides your hand as you practice. You'll garnish with crushed peanuts

and fresh lime, understanding each component's role. Again, shrimp can be

substituted with chicken, tofu, or vegetables based on your dietary preferences.

DISH 3: GREEN CURRY WITH CHICKEN (30 minutes)

The most complex and aromatic of your dishes. You'll learn to make curry paste

from scratch — grinding fresh green chilies, garlic, shallots, and herbs into

a fragrant paste using traditional techniques. Chef Ern explains how coconut milk

transforms this paste into a silky, complex sauce. You'll add tender chicken and

Thai vegetables, learning how timing affects texture and flavor infusion. This

dish showcases Chef Ern's 5+ years of professional kitchen experience as he

shares professional secrets about balancing heat, creaminess, and herbaceous notes.

DISH 4: MANGO STICKY RICE (20 minutes)

You'll finish your culinary journey with Thailand's beloved dessert. This sweet,

tropical finale combines perfectly ripe mango with sticky rice infused with

coconut milk and just a hint of salt. Chef Ern teaches the technique for cooking

sticky rice to the ideal texture and shows you how to properly select ripe mango.

The result is a light, refreshing dessert that cleanses the palate after the

rich, spiced main courses.

TASTING & SHARING (15 minutes)

The best part — you sit down together and enjoy the four dishes you've prepared,

sharing stories and experiences with Chef Ern and fellow travelers. Each dish

tastes even better knowing you created it with your own hands.

DEPARTURE WITH RECIPE BOOKLET (remaining time)

As you leave, you'll receive a detailed recipe booklet so you can recreate these

dishes at home, bringing the flavors and memories of Thailand back with you.

Best cooking class I have ever taken anywhere in the world. Chef Dao taught us to make Tom Yum from scratch, proper Pad Thai (not the sweet tourist version), and a Green Curry that was absolutley incredible. She explained the flavour balance of Thai cooking, sour salty sweet spicy, and how to adjust each element. The kitchen is beautiful, open air with views of the garden where they grow their own herbs. I have already made the Pad Thai twice at home and my family loves it.

Really professional cooking school in Cherngtalay, not some backpacker kitchen. Each student gets their own cooking station with proper equipment. We learned to make 3 dishes and the instructor was patient even when I was slow with the chopping. The Tom Yum soup was the star, learning which herbs go in and when makes all the difference. They give you a recipe booklet to take home. Already ordered the ingredients from an Asian grocery store back home.

My husband and I did this on our last day in Phuket and wish we had done it first! Understanding the ingredients and techniques made every meal we ate afterwards so much more interesting. The Green Curry recipe was amazing, fresh coconut cream, homemade paste from scratch, the aroma was unbelievable. Chef Dao has so much personality and made the class entertaining not just educational. The portion sizes for tasting were generous too, we skipped dinner after.

Great cooking class in a lovely setting. Learned to make Tom Yum, Pad Thai and Green Curry which are exactly the dishes I wanted to learn. The instructor was very hands on and showed us the proper technique for each step. My Pad Thai actually tasted like the ones in restaurants which ive never managed at home before. Small class size (6 people) meant lots of individual attention. Only minor note, getting to Cherngtalay from Patong took about 30 mins but they arranged transfer.

Frequently Asked Questions

The Seasoning Thai Cooking Class in Cherngtalay teaches you to prepare 3–4 authentic Thai dishes in a single session. The signature menu includes Tom Yum Goong (hot and sour prawn soup), Pad Thai (stir-fried rice noodles), and Green Curry with your choice of protein. Depending on the session, you may also prepare a Thai dessert such as mango sticky rice or coconut pandan pancakes. Each dish is made entirely from scratch using fresh market ingredients — no pre-made pastes or shortcuts. You eat everything you cook at the end of the class, which serves as a full meal.
Yes — all ingredients, equipment, and cooking stations are fully provided at the Seasoning Thai Cooking Class. Each participant has their own individual cooking station with a wok, gas burner, utensils, cutting board, and all pre-measured fresh ingredients. The instructor demonstrates each step before you replicate it at your own station. An apron is provided to protect your clothes. You do not need to bring anything except an appetite and your camera — the open-air kitchen setting in Cherngtalay makes for excellent photos and videos of your cooking journey.
Yes — the Seasoning Thai Cooking Class accommodates vegetarian, vegan, gluten-free, and halal dietary requirements with advance notice. Vegetarian and vegan versions substitute tofu or mushrooms for meat and use vegetable-based fish sauce alternatives. Gluten-free guests receive tamari instead of soy sauce and rice noodles are naturally gluten-free. Nut allergies are managed by omitting peanuts from Pad Thai. Inform the operator at least 24 hours before your class so the chef can prepare the correct ingredients. The instructor is experienced in adapting traditional recipes without losing authentic Thai flavour.
The Seasoning Thai Cooking Class runs for approximately 3–4 hours including the introduction, cooking, and eating. A typical session breakdown: 30 minutes for welcome, ingredient introduction, and a walkthrough of Thai herbs and spices; 2–2.5 hours of hands-on cooking (3–4 dishes prepared sequentially); and 30–45 minutes for sitting down and enjoying everything you cooked. The pace is relaxed and social — this is not a rushed experience. If you are looking for a shorter or morning-only format, the Thai cooking class in Kata offers a morning jungle kitchen session.
The Seasoning Thai Cooking Class is located in Cherngtalay, a residential area in northern Phuket approximately 15 minutes from Bangtao Beach and 20 minutes from Surin Beach. The kitchen is set in a charming open-air tropical setting surrounded by lush greenery — far more atmospheric than a hotel conference room. Cherngtalay is easily accessible from all major Phuket hotel zones. Hotel pickup is available from Patong, Karon, Kata, and northern beach areas. The exact address and Google Maps link are provided upon booking confirmation.
Yes — every participant at the Seasoning Thai Cooking Class receives a printed recipe booklet with all the dishes taught during the session. The recipes include the exact ingredient measurements, step-by-step instructions, and the instructor's personal tips for replicating authentic Thai flavour at home. The booklet also lists common Western supermarket substitutes for hard-to-find Thai ingredients (such as galangal, kaffir lime leaves, and lemongrass). Many guests find this recipe booklet becomes a treasured souvenir — a practical reminder of your Phuket cooking adventure long after you return home.
Some sessions of the Seasoning Thai Cooking Class include an optional local market tour where the instructor guides you through a traditional Thai fresh market, explaining how to identify quality ingredients — from choosing the freshest galangal to selecting the correct type of chilli for each dish. The market visit adds approximately 30–45 minutes to the experience. Confirm with the operator when booking whether your chosen session includes the market component. If a market tour is essential to your experience, the Thai cooking class in Kata includes a dedicated market tour as a core part of the morning programme.
The Seasoning Thai Cooking Class operates with small group sizes of 6–12 participants maximum. This intimate format ensures the instructor can give personal attention to each guest, correct technique in real-time, and answer individual questions. Each participant has their own dedicated cooking station — you are not sharing a wok or burner with strangers. The small group also creates a warm, social atmosphere where you meet fellow food-loving travellers. For an even more private experience, enquire about private class bookings for couples or families.
Yes — children aged 6 and above can participate in the Seasoning Thai Cooking Class with parental supervision. The instructor adjusts chilli levels for younger palates and involves kids in safe tasks like mixing, pounding curry paste with a mortar and pestle, and taste-testing. Children under 6 can accompany parents but may not have their own cooking station. Thai cooking is inherently fun and visual for children — the colours, aromas, and hands-on nature make it one of Phuket's best family activities. Pair it with the Elephant Beach Experience for an unforgettable family day.
Absolutely — the Seasoning Thai Cooking Class fully supports vegetarian and vegan participants. Vegetarian versions of Tom Yum, Pad Thai, and Green Curry are prepared using tofu, vegetables, and mushrooms instead of meat or seafood. Vegan adaptations go further by replacing fish sauce with soy-based alternatives and omitting oyster sauce. The instructor explains how Thai cuisine traditionally uses plant-based flavour foundations (lemongrass, galangal, kaffir lime) that make vegetarian and vegan versions genuinely delicious rather than a compromise. Notify the operator at least 24 hours before your class for ingredient preparation.
The Seasoning Thai Cooking Class pairs beautifully with Phuket's other cultural and adventure activities. Morning + afternoon plan: take the cooking class in the morning, then join an afternoon private surf lesson at Kata Beach to burn off those calories. Full cultural day: combine the cooking class with a Muay Thai training session for the ultimate Thai cultural immersion. For travellers who want to try both Phuket cooking classes, the Thai cooking class in Kata offers a jungle kitchen setting with a market tour — a complementary but different experience.
