La clase empieza en un mercado y no en una cocina, y eso la cambia. Lo que hace

Un thali vegetariano, que en Rajastán significa varios platos pequeños alrededor del arroz y el pan y no un único plato principal.

Normalmente eso es un dal, una sabzi seca de verduras de temporada, un raita, y panes trabajados sobre el tawa: roti, y a menudo pan plano de bajra, el de mijo perla, que pertenece a este desierto y no al norte de la India en general.

Si quiere un plato concreto, gatte ki sabzi, ker sangri, dal baati churma, pídalo con antelación y el menú se adaptará. Es un anfitrión y un grupo pequeño, no una cadena de producción.

Por qué la comida rajastaní es cosa aparte

La cocina de aquí se construyó en torno a la escasez: poca agua, así que se cocinaba con ghee, leche y suero; pocas verduras frescas, así que la harina de garbanzo, las lentejas y las judías secas del desierto sostenían el plato; sin refrigeración, así que buena parte de la comida se especia en seco y aguanta días.
