Y los callejones de detrás, donde de verdad trabajan los estampadores con tampón y los plateros.

Lo que come

La comida de calle de Jaipur es cosa aparte. Pyaaz kachori, un hojaldre relleno de cebolla especiada, comido caliente y grasiento. Mirchi bada, un chile entero en masa de harina de garbanzo, menos violento de lo que suena. Ghewar, el dulce alveolado en forma de disco empapado en almíbar, hecho bien solo aquí. Lassi en un vaso de barro que se tira después. Y chai de una olla que lleva encendida desde la mañana.
