Deux heures, à pied, avec un guide dont le travail est de vous emmener aux étals et boutiques que Jaipur elle-même fréquente plutôt que celles avec des enseignes en anglais.

Ce qu'est réellement la cuisine du Rajasthan

Le désert l'a façonnée. L'eau était rare, donc les plats étaient cuisinés au ghee, au lait et au lait fermenté plutôt qu'à l'eau. Les légumes frais étaient rares, donc la farine de pois chiche, les lentilles et les haricots séchés du désert constituaient le plat. Il n'y avait pas de réfrigération, donc une grande partie de la nourriture est épicée à sec et se conserve plusieurs jours.

Une fois que quelqu'un vous explique cela pendant que vous mangez, toute la cuisine prend son sens.

Ce que vous mangerez

Le pyaaz kachori, la pâtisserie frite farcie d'oignon que Jaipur réussit mieux que partout ailleurs, dans une boutique qui frit depuis les années 1950 et dont la file sort toujours dans la rue.

Le mirchi vada, un piment vert entier farci de pomme de terre épicée, pané et frit. Moins fort qu'il ne paraît et complètement addictif.

Le dal baati churma si la visite comprend un repas assis : des petits pains de blé dur cuits jusqu'à craquer, émiettés dans du ghee, avec un dal épicé et un churma sucré émietté à côté.

Le ghewar en saison, un disque de pâte alvéolée trempée qui appartient aux festivals de la mousson. Le lassi dans un kulhad en argile. Le mawa kachori si vous avez de la place, ce qui ne sera pas le cas.

Et les confiseries du bazar Johari, où LMB vend sous une forme ou une autre depuis 1727.

Deux options

La visite standard, ou une version matin et soir, les matins pour le kachori et la nourriture du petit-déjeuner, les soirs pour le chaat et les sucreries.

Venez affamé, et ne mangez pas avant, les gens sous-estiment systématiquement la quantité de nourriture que contiennent deux heures.

Our guide, Abdul, waited for us at the meeting point with no complaints. He brought us to the heart of Jaipur and share with us the best and most delicious delicacies of the city. He also share info about the city itself and the bazar. We ended the tour full and happy. Thank you Abdul!

We had a fabulous tour with Abdul. He taught us so much about the history of the city, the trades which take place in the Bazaar and of course all of the delicious food we had the pleasure of tasting. He was careful to take us to places that he frequents and places that he knew were clean and safe to eat. We had a great variety of sweet, sour and spicy food and we were so full, even taking some things home with us. This is a great way to push you out of your comfort zone and to be adventurous in Jaipur. Thanks for a wonderful afternoon!

We loved our experience with Abdul! He is such a knowledgeable and kind guide who took us to fantastic spots and told us all about the history of Jaipur. He even dropped us off at a local block printing business when we told him we were interested. Could not recommend enough!

After arriving in Jaipur only this morning, we wanted to do something relaxed as a little introduction. This tour is a must do, and you NEED to ask for Abdul to be your guide. He made this food tour so tailored to our needs, and is overall a genuinely lovely person. We were so lucky to have found him today, the rest of our trip to Jaipur will have to work very hard to beat this tour!

Abdul was absolutely amazing. he informed us about the history of Jaipur as well as informed us about the food. He was also very accommodating for my unwell husband making sure the food was safe for him and even getting him an electrolyte drink.
