Heritage Walk & Street Food Tasting in Jaipur

Jaipur on foot, eating as you go.

The walled city was laid out in 1727 on a grid, which is unusual for an Indian old city and makes it genuinely walkable. What you cannot do from a car is stop where the food is, and that is most of what this three hours is.

What you eat

Pyaaz kachori — a flaky pastry stuffed with spiced onion, fried and eaten hot. Rajasthan's contribution to Indian breakfast and better here than anywhere.

Samosa, the Jaipur version, which is drier and more heavily spiced than the Delhi one.

Mirchi bada, a whole green chilli in gram-flour batter — less violent than it sounds, and the reason people order a second.

Ghewar, the disc-shaped honeycomb sweet soaked in syrup, made properly only in Rajasthan. Plus lassi in a clay cup you throw away after, and masala chai from a pot that has been going since morning.

The heritage part

Between stops, the buildings and lanes: the painted havelis behind the bazaar fronts, the lac bangle makers working resin over an open flame in doorway-width shops, the block printers, and the grid logic of a city built to a plan when almost nothing else in India was.
