Amer in the evening, then cook dinner above it.
Amer Fort in the late afternoon is a different place from Amer at eleven in the morning: the coach parties have gone, the light is warm on the sandstone, and you can stand in the Sheesh Mahal without a queue behind you.
Afterwards you go up to a rooftop near the fort and cook with a local Rajasthani family.
The cooking
Rajasthani food was shaped by the desert. Water was scarce, so dishes were cooked in ghee and buttermilk. Fresh vegetables were scarce, so lentils and gram flour carried the plate. Once you know that, the whole cuisine makes sense.
You will likely make dal baati churma — wheat rolls baked until they crack, broken into ghee, with dal and a sweet crumble — or gatte ki sabzi, gram-flour dumplings in a yoghurt curry, which exists precisely because there were no vegetables. Plus a bread on the tawa and rice.
Then you eat it on the roof, with the fort lit on the ridge opposite.
