Jaipur's walled city empties of visitors around six and fills with locals. The bazaars stay open, the food stalls get going, and the lanes behind the main streets — where the craftsmen actually work — are quieter and easier to walk.

What the walk covers

The night bazaars along Johari and Bapu, still trading. The hidden lanes behind them: lac bangle makers working resin over a flame in doorway-width shops, block printers, silversmiths. The street art and painted facades that are easy to miss in daylight glare.

And the food, which is the reason most people book it. Jaipur's street food is its own thing: pyaaz kachori, a flaky pastry stuffed with spiced onion, eaten hot; mirchi bada, a whole chilli in gram-flour batter, which is less violent than it sounds; ghewar, the disc-shaped honeycomb sweet soaked in syrup that is made properly only here; lassi in a clay cup you throw away after.
