Buy it, cook it, eat it
The class starts in a market rather than a kitchen, which changes it. You pick the vegetables, smell the spices before they are ground, and hear what your host is looking for in them — which coriander is fresh, why the ginger with thin skin is the one to buy, how much of a whole-spice mix goes in before the onions.
Then a home kitchen, and you cook.
What you make
A vegetarian thali, which in Rajasthan means several small dishes around rice and bread rather than one main course.
Usually that is a dal, a dry sabzi of seasonal vegetables, a raita, and breads worked on the tawa — roti, and often bajra flatbread, the millet one that belongs to this desert rather than to north India generally.
If you want a specific dish — gatte ki sabzi, ker sangri, dal baati churma — ask in advance and the menu will bend. It is one host and a small group, not a production line.
Why Rajasthani food is its own thing
The cooking here was built around scarcity: little water, so dishes were cooked in ghee, milk and buttermilk; few fresh vegetables, so gram flour, lentils and dried desert beans carried the plate; no refrigeration, so much of the food is dry-spiced and keeps for days.
Once someone tells you that in a kitchen, the whole cuisine stops being a list of unfamiliar names.
Then lunch
You eat what you cooked, with your host, sitting down. That is the end of the class.
