Somebody's actual kitchen
You are welcomed into a home with a drink, and then you cook. There is no counter, no chef's whites and no demonstration — it is a family teaching you what they make, in the room they make it in.
Two hours, which is the right length for a class rather than an event.
What you cook
Onion pakora to start, because it is the thing every Rajasthani kitchen makes when someone arrives: gram-flour batter, sliced onion, spices, deep-fried, eaten hot with chai.
Dal — and the point of learning it here is the tempering. Whole cumin, mustard seed, dried chilli and asafoetida go into hot ghee and are poured over the cooked lentils at the end. That step is most of the flavour and nobody outside India does it.
A vegetarian curry, seasonal, and roti worked on the tawa — which looks easy and is not, and which your host will let you fail at cheerfully.
Why Rajasthani food works the way it does
The desert shaped it. Water was scarce, so things were cooked in ghee, milk and buttermilk. Fresh vegetables were scarce, so gram flour, lentils and dried desert beans carried the plate. There was no refrigeration, so much of the food is dry-spiced and keeps for days.
Once somebody tells you that while you are standing in the kitchen, the whole cuisine makes sense.
Two options
The snack version — pakora, one dish and chai. Or the full meal, where you cook a complete Rajasthani thali and sit down to eat it with the family.
Practical
Vegetarian throughout. Jain, no-onion-and-garlic, no-chilli and gluten-free are all normal requests here — say so when you book and the menu shifts.
You leave with the recipes, and a fairly accurate idea of how much ghee is actually involved.
