Cooking, and the stories that come with the dishes.
What separates this from a standard class is the storytelling. Rajasthani dishes carry their history openly — dal baati was cooked by Rajput armies because baati could be baked in sand and kept for days; ker sangri exists because those were the only two things the desert reliably produced; gatte ki sabzi is gram flour standing in for vegetables that were not there.
Your host tells you that while you cook, in their own home.
What you make
Depending on the day and the season: dal baati churma — wheat rolls baked until they crack, broken into ghee, with dal and a sweet crumble. Gatte ki sabzi, gram-flour dumplings in a yoghurt curry. A bread worked on the tawa. Rice, and whatever vegetables are good that week.
The spice box gets opened early and explained, which is the part people carry home: what cumin does that coriander does not, why garam masala goes in last and turmeric first, what asafoetida is for.
Then dinner, with the family, of what you made.
