La cuisine est la raison de venir.

Le Gurudwara Bangla Sahib est le temple sikh le plus connu de Delhi : un dôme doré, une cour de marbre, et le Sarovar, un bassin sacré autour duquel on marche et dans lequel on se baigne. C'est beau, et ce n'est pas la partie remarquable.

La partie remarquable, c'est le langar. La cuisine ici prépare et sert de la nourriture gratuite à quiconque arrive : des dizaines de milliers de repas chaque jour, davantage le week-end et les jours de fête, à tout le monde sans distinction de religion, de caste, de revenu ou de nationalité. Elle est tenue presque entièrement par des bénévoles, dont beaucoup sont de simples visiteurs qui se sont arrêtés pour aider. Vous vous asseyez par terre en rangées et mangez la même chose que tous les autres.

Vous pouvez entrer dans la cuisine et la voir tourner : les cuves de dal qu'il faut deux personnes pour remuer, la machine à rotis qui en sort des milliers à l'heure, et à côté une rangée de gens qui les roulent à la main parce que c'est ainsi qu'on a toujours fait. Les visiteurs sont bienvenus pour donner un coup de main, et beaucoup le font.

Votre guide explique les principes derrière tout cela : le seva, le service sans attente de retour, et l'égalité voulue de tous assis sur le même sol.

Bon à savoir

La tête doit être couverte par tout le monde, et on se déchausse à l'entrée. Des foulards sont fournis gratuitement à la porte ; le dépôt des chaussures est gratuit aussi.
L'entrée est gratuite. La nourriture aussi. Les dons sont volontaires et jamais sollicités.
Lavez-vous les pieds à l'entrée : il y a un canal peu profond que tout le monde traverse.
La photographie est permise dans la cour, plus limitée dans la salle de prière. Votre guide vous dira où.
Donner un coup de main en cuisine est vraiment bienvenu si vous le souhaitez. Dites-le et votre guide l'organisera.
