Des parathas dans Paranthe Wali Gali, une ruelle qui ne vend rien d'autre depuis les années 1870, frits au ghee et servis avec quatre chutneys. Le daulat ki chaat, qui n'existe qu'en hiver et qu'au Vieux Delhi : une mousse de lait battue toute la nuit en plein air, récoltée à l'aube, disparue à midi. Des kebabs autour de la Jama Masjid, cuits sur braises dans la rue. Du chaat dans sa vraie forme : papdi, aloo tikki, dahi bhalla. De la jalebi d'une boutique qui la frit au même endroit depuis 1884. Du kulfi de chez Kuremal, où ils le glacent à l'intérieur d'une mangue évidée.

Et un tour en rickshaw dans les ruelles, le seul moyen de les traverser puisque les voitures ne peuvent pas y entrer.
